The combination of comfrey and peanuts is an especially tasty one and this dish mixes African and Asian cooking techniques to give a fiery but flavoursome dish. For me the chillies help give the dish a lift, but you can omit them completely if desired. Ingredients:
50ml olive oil
Comfrey and Peanuts Preparation:Method:Heat the oil in a pan, add the onion and fry for about 4 minutes then add the chillies. Continue frying until the onion is lightly brown then add the comfrey leaves and cook for 5 minutes. Mix the peanut butter and the stock to a smooth paste and add to the comfrey leaf mixture. Continue cooking rapidly for 10 more minutes then add the peanuts and cook for 5 minutes more, or until almost all the liquid has evaporated. Season well with salt and pepper and serve. |
