Coltsfoot Throat Lozenge Recipe

Origin: Britain      Period: Traditional

Ingredients:

1l loosely-packed coltsfoot leaves
450g sugar
600ml water
450g Golden syrup (or corn syrup)
50g butter
1/2 tsp baking soda

Coltsfoot Throat Lozenge Preparation:


Method:

Wash the coltsfoot leaves then place in a pan along with the water. Bring to a boil and cook for 2 minutes. Drain the leaves, reserving the liquid.

Add the sugar, golden syrup and butter to a pan, along with the cooking liquid. Bring to a boil and cook to the 'brittle point' — this is when the toffee turns brittle when dropped into a bowl of cold water.

Take off the heat at this point and add the baking soda. Beat the mixture with a spoon until almost stiff then pour into a shallow, oiled, baking tray. Alow to set then break into pieces (easiest done by beating with a rolling pin) and store in a jar.
