Coconut Rice with Pork Recipe

Origin: Ghana      Period: Traditional

Ingredients

1 tsp groundnut oil
1/2 tsp salt
280g rice
450g pork, diced
800ml coconut milk

Coconut Rice with Pork Preparation:


Method:

Heat the oil in a pan or wok until almost smoking then add the pork and salt. Stir-fry until the meat has browned then add the coconut milk and bring to a boil over medium heat. Add the rice, lower to a simmer, cover and cook for 15 minutes. Stir occasionally and add a little water if the rice begins to stick. Serve immediately.
