Coconut Rice Recipe

Origin: West Africa      Period: Traditional

Ingredients

480ml coconut milk
1 tsp dried, ground, crayfish (or prawns)
200g uncooked rice
400g chopped tomatoes
1 small onion, chopped
cayenne pepper, to taste
salt, to taste

Coconut Rice Preparation:


Method:

Place the coconut milk in a pan and bring to the boil. Add the rice, crayfish, tomatoes and onions then season with cayenne pepper and salt. Cover and steam until the rice is cooked and quite dry (about 20 minutes). Fluff with a fork and serve as an accompaniment.
