Coconut Pie Recipe

Origin: sub-Saharan Africa      Period: Traditional

The coconut pie is an international dish well known in the Americas. This was introduced to Africa by European settlers but is now made throughout sub-Saharan Africa. The recipe given below is based on a Liberian original.

Ingredients:

225g butter
100g sugar
2 eggs, beaten
250ml milk
400g grated coconut
1 tsp vanilla extract
pinch of baking soda
1/2 tsp grated nutmeg
pinch of cloves
1 22cm Sweet Shortcrust Pastry Shell

Coconut Pie Preparation:


Method:

First blind bake your pie shell by placing in an oven pre-heated to 180°C and bake for about six minutes. Take out of the oven and allow to cool completely.

Meanwhile, prepare the filling by creaming together the butter and sugar. Then add the eggs and mix thoroughly. Finally add all the remaining ingredients and mix well. Pour into the pie shell (you can decorate the top with strips of pastry arranged in a criss-cross pattern if you wish.

Place in an oven pre-heated to 180°C and bake for about 35 minutes, or until the filling is set and the pastry is golden brown in colour.
