Ingredients
850g flour
Coconut Bread Preparation:Method:Sift all the dry ingredients into a bowl. Lightly whisk the eggs into a bowl and beat-in the milk, melted butter and vanilla extract. Stir this into the dry ingredients then add the grated coconut, raisins and/or other dried fruit. Use a wooden spoon to blend all the ingredients together. Form into a dough, tip onto a floured board and knead lightly. Split the dough in two, shape into loaves and put in greased loaf tins, ensuring that they are only, at most, 2/3 full. Dust the loaves with icing sugar then place in an oven pre-heated to 180°C and bake for about 40 minutes, or until the oaves are well risen and golden brown in colour. |
