This is an ice cream for the lactose intolerant and I often make it for my wife (who is West African). It's very easy to make, but yo do need very ripe bananas for maximum flavour. Ingredients:
4 very ripe bananas
Coconut and Banana Ice Cream Preparation:Method:Add the sugar and water to a saucepan. Heat gently until the sugar dissolves then bring to a boil and immediately take off the heat then set aside to cool. Once the syrup is cold peel the bananas, chop roughly and add to a food processor along with the lemon juice. Purée until smooth then add the syrup and process. Turn into a bowl and mix in the coconut cream. Pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions. |
