Christmas Bannock RecipeOrigin: Scottish Period: Traditional |

This is a variant of the traditional Scottish Bannock that contains mixed peel and almonds and which is intended as a Christmas treat to be served with coffee. Ingredients:
210g flour
Christmas Bannock Preparation:Method:In a large bowl, combine together the flour, salt and sugar. Stir to blend then add the mixed peel and almonds. Toss to coat in the flour then add the butter and rub into the mixture with your fingers until the mixture comes to resemble fine breadcrumbs. Tip the mixture into a well-greased 20cm baking tin and using the back of your hands press down firmly. Scatter the sugar over the top then place in an oven pre-heated to 170°C and bake for about 30 minutes, or until lightly browned. Take out of the oven and immediately cut into 3cm squares. Allow to cool in the tin for 10 minutes then transfer to a wire rack to cool completely. Serve as an accompaniment to coffee. Find more Christmas Recipes Here |
