Chocolate Pecan Pralines RecipeOrigin: Cajun Period: Traditional |
Ingredients:
180g unsalted butter
Chocolate Pecan Pralines Preparation:Method:Melt the butter in a pan over high heat. Quickly add the sugars, milk, cream and chopped pecans. Cook for 5 minutes, whisking constantly. Reduce the heat to medium and continue cooking, with constant whisking, for 10 minutes. Add the pecan halves and continue whisking and cooking until done (about 8–10 minutes). Stir-in the vanilla extract and immediately add 50g of the chocolate chips into about 1/6 of the batter. Stir quickly to prevent the chips from melting then drop the mixture onto a baking sheet by heaping spoonfuls and using a second spoon the push the batter off the first. Your are aiming for pralines that are about 5cm long and 1 cm thick. Repeat with the remaining mixture, stirring briefly before adding the chocolate chips. The finished pralines should be light brown, opaque and somewhat crumbly. |
