140g Chocolate Wafer crumbs
Chocolate Orange Supreme Cheesecake Preparation:Method:Combine the crumbs and butter in a bowl then press into the base of a 22cm diameter springform cake tin before placing in an oven pre-heated to 160°C and bake for 10 minutes then remove from the oven and set aside. Meanwhile, soften the cream cheese in a bowl then beat in the sugar, mixing until smooth. Add the eggs, one at a time, beating thoroughly to combine after each addition. Now blend in the sour cream and vanilla extract. Transfer 720ml of the batter to a separate bowl then blend in the chocolate until smoth. Beat the orange liqueur and the orange zest into the original batter. Pour the chocolate batter over the crust then transfer to an oven pre-heatd to 170°C and bake for 30 minutes. Reduce the oven temperature to 160°C then pour the orange batter over the top of the cake, return to the oven and continue baking for a further 30 minutes. Transfer to a wire rack then loosen the sides of the pan (but do not remove) and set aside until completely cold. Now remove the sides of the pan and transfer the cheesecake to the refrigerator to chill completely. Garnish with whipped cream and additional nuts (if desired) then serve. |
