Ingredients
300g Finely-grated carrots
Chocolate Carrot Cake Preparation:Method:In a large bowl, combine the grated carrots, sugar and oil. Once they are thoroughly combined pour the boiling water over the mixture. In a separate bowl, combine all the remaining ingredients. Add these to the carrot mixture and mix well to combine. Pour into a lightly oiled & floured 20cm square pan. Place in an oven pre-heated to 170°C and bake for 35 minutes, or until a skewer inserted into the centre of the cake emerges cleanly. |
