Chizu Salad
(Moroccan Carrot Salad) Recipe

Origin: Morocco      Period: Traditional

Ingredients

450g carrots, peeled and cut into 0.5cm slices
1 tsp salt
1 tsp ground cumin
1 tsp paprika
1/2 tsp white pepper
1/4 tsp hot chilli flakes
2 tbsp olive oil
1 garlic clove, finely chopped
juice of 1 lemon
1 tbsp flat-leaf parsley

Chizu Salad
(Moroccan Carrot Salad) Preparation:


Method:

Bring a pan of lightly-salted water to the boil and add the carrots. Cook until they are just soft then drain and cool.

Mix the remaining ingredients into a dressing. Place the carrots in a bowl and add the dressing, tossing the carrots to coat them.
