Chipotle Mash Recipe

Origin: Fusion      Period: Modern

Chipotle en Adobo Sauce is becoming a very common ingredient in the cuisine of the south-western USA. It's a very versatile and flavoursome sauce and here it's used to give a little 'zing' to mashed potatoes. The resultant mash goes rather well with beef sausages.

Ingredients:

600g potatoes, peeled and chopped
100ml Chipotle en Adobo Sauce
2 tbsp butter
salt and black pepper, to taste

Chipotle Mash Preparation:


Method:

Bring a pan of lightly-salted water to a boil. Add the potatoes, return to the boil and cook for about 20 minutes, or until the potatoes are tender. Drain in a colander then return to the pan, add the butter and roughly mash. Add the Chipotle in Adobo Sauce and mash until smooth then adjust the seasonings and serve.
