Chilli Honey Wings Recipe

Origin: African Fusion      Period: Traditional

Ingredients:

1.2kg chicken wings
4 garlic cloves, finely chopped
60ml grundnut oil
2 tbsp soy sauce
60ml rice wine vinegar
60ml honey
2 hot chillies (eg Scotch bonnet) very finely chopped (or to taste)
2 tsp freshly-grated ginger
1 tsp dried thyme
1/2 tsp mustard powder
4 sprigs of rosemary, soaked in water

Chilli Honey Wings Preparation:


Method:

Whisk together all the liquid ingredients and spices in a bowl. Add the chicken wings and toss to coat. Cover and refrigerate for 2 hours. Every 20 minutes or so, toss the contents of the bowl to ensure that the chicken wings are well coated.

In the meantime, heat your barbecue and when the chicken wings have marinated sufficiently and the charcoal is turning white drain your rosemary sprigs and add to the barbecue. As soon as the rosemary begins to smoke add the chicken wings and cook for about 10 minutes on one side. Baste with any remaining marinade then turn and cook for 10 minutes on the other side, or until done. Serve immediately with rice.
