Chilli Chow-Chow RecipeOrigin: African Fusion Period: Modern |
|
Traditional chow-chow is a relish made from a range of vegetables. This version gives an African twist with the addition of chillies and is an useful addition to may African stews. It's also an extremely useful method for getting rid of your green tomatoes at the end of summer. Ingredients
900g chopped green tomatoes
Chilli Chow-Chow Preparation:Method:Roughly chop the vegetables in a food processor (make sure you have quite a few chunks left), add the salt, mix in and let the mixture stand over night. Place the mixture in muslin cloth and press out all the liquid you can then transfer the vegetables to a large pot. Add the vinegar, brown sugar, mustard, turmeric, allspice, celery seed and the black pepper and bring to the boil. Reduce to a simmer and cook for 1 hour, stirring frequently. Pour the relish into warmed, sterilized jars, leaving a 3mm head space and seal. Leave to mature for at least 2 weeks. |
