Chilli Barbecue Sauce Recipe

Origin: America      Period: Traditional

Ingredients:

900ml passata (tomato sauce)
120ml black treacle (molasses)
10 garlic cloves, finely chopped
2 tbsp ground cumin
2 tbsp mustard powder
freshly-ground black pepper, to taste
1/2 tsp ground cinnamon
1/2 tsp hot chilli flakes
120ml red wine vinegar

Chilli Barbecue Sauce Preparation:


Method:

Add all the ingredients (except the vinegar) to a saucepan. Bring to a simmer then cook, covered, over low heat for 1 hour, stirring occasionally. Add the vinegar at this point and continue cooking for 15 minutes.

Take off the side and allow to cool. Transfer to a sealed jar and refrigerate for at least 24 hours before use.
