Ingredients:
2 skinless chicken breasts, very thinly sliced
Chicken Stroganoff with Wild Rice Preparation:Method:Place 450ml of water in a pan along with a little salt. Bring to a boil and as soon as it has reached boiling point add the rice. Cook the rice for 15 minutes then drain and rinse under plenty of cold water. Place a wok on the hob and heat until almost smoking. Add the oil and the chicken and stir-fry until golden all over. Now add the mushrooms and onion and continue stir-frying. When the onion is almost soft (about 2 minutes) add the brandy, cream, butter and cayenne pepper then season with salt and freshly-ground black pepper. Bring the mixture to a boil, reduce to a simmer, then cook for a further 2 minutes so that the flavours combine. Serve hot, along with the rice. |
