Chicken of the Woods with Wild Rice RecipeOrigin: America Period: Traditional |
Ingredients:
300g chicken of the woods fungus, cleaned and diced
Chicken of the Woods with Wild Rice Preparation:Method:Melt 2 tbsp of the butter over medium high heat in a frying and use to fry the shallots for about 4 minutes, or until translucent. Add the mushrooms and fry for 10 minutes, or until the mushroom pieces release their liquid and all the fluid evaporates. In the meantime, melt the remaining butter in a large pan then add the wild rice and fry, stirring continuously, for 5 minutes. Add the mushroom mix and the stock to this pan then season to taste. Bring to a boil over high heat then reduce to a simmer and cook for 20 minutes, cover, or until the rice is tender. Continue cooking, uncovered, if the mixture is still wet to allow any excess liquid to evaporate then fluff the rice, stir-in the parsley and serve. |
