Chicken of the Woods and Prawns with Noodles Recipe

Origin: Fusion      Period: Traditional

Ingredients:

2 tbsp butter
1 large onion, sliced
350g chicken of the woods mushroom, washed and sliced
1 tsp brown sugar
20 large prawns (shelled)
3 tbsp cream
1 tsp paprika
salt, to taste
1 tsp fresh basil, shredded
2 tbsp freshly-grated Parmesan cheese
350g egg noodles

Chicken of the Woods and Prawns with Noodles Preparation:


Method:

Melt half the butter in a pan and use to fry the onion and the chicken of the woods mushroom with the brown sugar until soft and caramelized (about 6 minutes). Take off the heat and set aside.

Cook the noodles in lightly-salted water according to the package instructions (about 6 minutes). In the meantime, melt the remaining butter in a pan and use to fry the prawns until pink and cooked through. Add the onion and mushroom mix and stir to combine before adding the cream and paprika.

Arrange the noodles in a bowl, season the mushroom and prawn mix with salt and basil then arrange over the noodles. Garnish with the Parmesan cheese and serve.
