Chicken Kebabs in an Oriental Sauce Recipe

Origin: Fusion      Period: Modern

Ingredients:

4 chicken breasts, skinned and cut into 4cm cubes
115g of button mushrooms
2 tbsp olive oil
2 tbsp black bean sauce
2 tbsp Hoisin sauce
2 garlic cloves, minced
1 green bell pepper, de-seeded and cut into 4cm squares
1 red bell pepper, de-seeded and cut into 4cm squares
1 tsp black pepper
1 Chinese Five-spice powder

Chicken Kebabs in an Oriental Sauce Preparation:


Method:

Mix together all the ingredients (except the chicken breasts, mushrooms and bell peppers) in a bowl and whisk to combine. Add the cubed chicken and toss to coat then cover and set aside to marinate for 2 hours. If using bamboo or wooden skewers soak them in a large bowl of water.

At the end of this time thread the chicken, mushrooms and peppers on the skewers (alternate these). Place on a hot barbecue and cook for about 50 minutes to 1 hour, or until the chicken is done, turning frequently. As you turn the kebabs baste with any remaining marinade to caramelize the vegetables and intensify the flavour. Serve on a bed of rice.
