Egusi seeds (also called agusi, agushi, egushi) are a variant form of watermelon (Citrullus lanatus var. lanatus) seeds with a fleshy pericarp, commonly called egusi seeds which is extensively cultivated in Nigeria for the high protein and carbohydrate content of the edible seeds. They are often added, pulverized to a powder as a thickener to stews. Ingredients:
1 chicken cut into serving-sized pieces
Chicken with Egusi Preparation:Method:Heat the oil in a frying pan add the chicken and then the onions and fry until the chicken has browned on all sides. Meanwhile bring the chicken stock to a boil in a separate pot. Stir-in the tomatoes and add the egusi seeds, stirring until smooth. Allow this mixture to cook for several minutes before adding the chicken and onions. Reduce the heat then simmer until the chicken is done. Add the parsley and season to taste. Serve with FuFu or rice. |
