Chicken Curry with Yams Recipe

Origin: Fusion      Period: Modern

Ingredients:

900g chicken drumsticks and thighs
2 large onions, chopped
1 tbsp garlic, minced
1 tbsp ginger, freshly grated
2 heaped tbsp curry powder
1 banana, sliced
2 bay leaves
1l chicken stock
3 large yams, peeled and chopped (about 800g)
salt and black pepper, to taste

Chicken Curry with Yams Preparation:


Method:

Add a little oil to a large pan then season the chicken and brown on all sides. Remove the chicken and set aside to keep warm. Add the onions, garlic and ginger to the pan and cook until nicely caramelized (about 12 minutes) then add the curry powder. Stir to combine then fry for 2 minutes. Return the chicken to the pan then add the banana, bay leaves, yams and chicken stock. Adjust the seasoning then bring the mixture to a boil, reduce to a simmer, cover and cook slowly for about 2 hours.

Serve hot on a bed of basmati rice.
