Ingredients:
150g chestnut mushrooms, thinly sliced
Chestnut Mushroom, Orange and Walnut Salad Preparation:Method:Peel the orange (do this with a sharp knife to remove the pith as well) then slice very thinly, removing any pips. Layer the slices of orange and mushrooms in a flat dish then sprinkle the walnut pieces over the top. Whis together the walnut oil, orange juice, honey and Dijon mustard in a small bowl then pour over the salad. Decorate with the Parmesan cheese and serve. |
