This is one of my favourite ways of using the new season's first harvest of chestnuts. Deceptively simple, yet extremely delicious. Ingredients
10 sweet chestnuts
Chestnut Breakfast Spread Preparation:Method:Cut a cross in the tops of the sweet chestnuts then place in a pan of boiling water and cook for about 5 minutes. Remove with a slotted spoon and as soon as you can handle remove the tough outer shells. Rub away the inside peel then return the blanched chestnuts to the boiling water and cook until soft. Once the chestnuts are soft remove with a slotted spoon, place in a bowl then season liberally with black pepper and mash. Serve immediately spread on hot, buttered, toast. |
