1 smoked ham (about 3kg)
Cherry Coconut Baked Ham with Creamy Cherry Glaze Preparation:Method:Begin with the glaze. Combine the sugar, cream and butter in a small saucepan. Heat gently until the sugar dissolves then bring to a simmer. Meanwhil, whisk together the cornflour with the 2 tbsp water to form a smooth paste. Stir into the sugar mixture then add the cherries and bring to a boil, whisking constantly. Reduce the heat and continue to cook, stirring constantly, until the mixture thickens. Continue cooking for 2 minutes then take off the heat. Arrange the ham with the flat side uppermost in a roasting tin. Transfer (uncoverd) to an oven pre-heated to 160°C and roast until done (for a fully-cooked ham, roast for 50 minutes per kg). For the final 40 minutes of roasting brush the ham with the cherry glaze. When the meat is ready, remove from the oven and immediately sprinkle with the flaked coconut. Allow to rest for 10 minutes before carving and serving. |
