I was arranging a menu for a party of my brother's a few months ago and I knew that he had some Hindu friends coming. So I needed a few dishes for them that were vegan. Which is where these biscuits came in. They're vegan, dairy-free and wheat free. They're also very tasty! Ingredients
75g glacé cherries, quartered
Cherry Biscuits Preparation:Method:Toast the seasme seeds in a dry frying pan, stirring constantly, until golden. Take of the heat and allow to cool then combine with the cherries, rice flour, oats and salt in a bowl. Add the cranberry juice and vanilla extract and mix thoroughly with a wooden spoon. Bring the mixture together as a dough then, using floured hands, divide into 12 roughly equal balls. Flatten these with your palms into biscuit shapes about 1cm thick and place about 3cm apart on a lightly-oiled baking tray. Place in an oven pre-heated to 180°C and bake for about 20 minutes, or until golden brown. Allow to cool on the baking tray for 10 minutes then transfer to a wire rack to cool completely before serving. |
