Chepacy Recipe

Origin: Czech      Period: Traditional

Ingredients

2 eggs, lightly beaten
1 tbsp milk or single cream
280g flour
1 tsp salt
oil for deep frying
icing sugar


Chepacy Preparation:


Method:

Beat together the eggs and the cream then mix in the flour and salt. Turn the resultant dough onto a floured board and knead until smooth. Roll out thinly, as you would for noodles then, using a sharp knife, cut into diamonds about 5cm per side. Make two 2cm slits in the middle of each piece of pastry.

Heat oil in a wok or deep fryer to about 180°C and add the pastry pieces. Cook on both sides until golden brown then drain on kitchen paper, sprinkle with icing sugar and serve.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
