Cheesy Crockpot Chicken and Vegetables Recipe

Origin: America      Period: Traditional

Ingredients:

45g diced bacon or ham
3 carrots, chopped
2 celery sticks, chopped
1 onion, sliced and chopped
115g mushrooms, sliced
250g fine beans, cut into 3cm lengths
60ml water
1.5kg chicken, cut into serving pieces
2 chicken stock cubes, crumbled
1 tbsp fresh parsley, chopped
3/4 tsp mixed herbs
400ml Cheese Soup
1 tbsp flour
45g freshly-grated Parmesan cheese

Cheesy Crockpot Chicken and Vegetables Preparation:


Method:

Place the bacon on the base of a slow cooker (crockpot) then layer the carrots on top, followed by the celery, the onion, the mushrooms and then the fine beans. Pour over the water and arrange the chicken on top. Crumble over the chicken stock cubes then sprinkle the parsley and mixed hers on top. Combine the cheese soup, flour and Parmesan in a bowl then pour this over everything.

Cover the crockpot and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. Serve hot with rice, mashed potatoes or champ.
