Cheese Soup Recipe

Origin: Britain      Period: Traditional

Ingredients

1l chicken stock or broth
200g chopped onion
200g chopped celery
200g chopped carrots
300g chopped potatoes
600g mixed vegetables (frozen is fine)
800ml cream of chicken soup
450g shredded cheese (eg Cheddar)

Cheese Soup Preparation:


Method:

Bring the chicken stock to a boil in a large pan and add the onion, celery, carrots and potatoes. Bring to a boil then cook for 10-15 minutes on medium heat. Add 600g mixed vegetables and cook for a further 5-6 minutes on medium heat. Add add 800ml cream of chcken soup and continue to heat until warmed through then add the cheese and continue to cook until creamy.
