Cheddar Cheesecake with Strawberries Recipe

Origin: Britain      Period: Traditional

Ingredients

175g vanilla wafer crumbs
2 tbsp butter, melted
480g cream cheese, softened
75g mature Cheddar cheese, grated
150g sugar
3 eggs
1/2 tsp freshly-grated orange zest
1/4 tsp freshly-grated lemon zest
2 tbsp plain flour
240ml double cream
1 punnet fresh strawberries
golden syrup

Cheddar Cheesecake with Strawberries Preparation:


Method:

In a bowl, combine the crumbs with the butter then press into the base of a 22cm diameter springform pan. Transfer to an oven pre-heated to 170°C and bake for 5 minutes. Remove from the oven and set aside to cool.

Meanwhile, cream together the cream cheese and the sugar in a bowl. Beat until light and fluffy then add the eggs, one at a time, beating thoroughly to combine after each addition. Blend in the zests and flour and mix thoroughly to combine. Add half the cream and mix thoroughly then pour the batter over the top of the crumb base. Transfer to the oven and bake for about 40 miutes, or until the cheesecake is set in the centre.

Transfer to a wire rack to cool then reomove the sides of the pan. Whip the remaining cream, use to top the cake then decorate with the strawberries. Brush with he golden syrup, chill and serve.
