This is a classic savoury bread and cheese pudding that makes an excellent starter when served with a green salad. Ingredients:
3 slices bacon, cut into 2 cm pieces
Cheddar Cheese Pudding Preparation:Method:Add the bacon to a medium frying pan over medium heat and cook until it has rendered of it's fat and begun to brown. Now add the onion, stir to combine and fry until soft and translucent, but not coloured (about 5 minutes). Take the mixture off the heat at this point and set aside. Meanwhile cream together the butter and mustard in a small bowl. Use this mixture to spread on both sides of the bread. Use four slices of the bread to line the bottom and sides of a deep pie plate then spoon half the onion mixture into the dish and spread evenly. Top with tree more slices of bread, add the remaining onion mixture then top with the remaining bread. Whisk together the eggs, milk, Worcestershire sauce, nutmeg and sherry in a bowl and pour over the pudding. Sprinkle the Cheddar cheese over the top and place in the centre of an oven pre-heated to 170°C and bake for about 20 minutes, or until the cheese is bubbly and has just started to brown. Allow to cool a little before serving with a green salad. |
