Chackchouka Recipe

Origin: Morocco      Period: Traditional

Ingredients

3 Green bell peppers, de-seeded and cut lengthways into strips
2 onions, sliced
8 small tomatoes, washed and halved
Olive oil
Salt and black pepper
Cayenne pepper
6 Eggs

Chackchouka Preparation:


Method:

Heat the oil in a pan, add the onions and bell pepper and cook over low heat for a few minuts then sason with the salt, black pepper and cayenne pepper before adding the tomatoes. Continue cooking until the peppers are tender. Meanwhile, crack the eggs into a bowl and lightly beat. Pour the eggs into the pan and cook whilst stirring with a fork. As soon as the eggs have scrambled serve your dish.
