Catfish Jambalaya Recipe

Origin: Cajun      Period: Traditional

Ingredients:

250g catfish fillets
250g smoked sausage, sliced, browned and drained
1 onion, chopped
2 garlic cloves, crushed
1/2 bell pepper, chopped
1 celery stick, chopped
60g butter
450g tomatoes
50g green chillies, de-seeded
salt to taste
cayenne pepper to taste
700g cooked rice
3 spring onions, chopped

Catfish Jambalaya Preparation:


Method:

Add all the ingredients (except the catfish, rice and spring onions) to a saucepan and cook until the mixture begins to turn a light brown. Season with salt and cayenne pepper then add the catfish and cook for a further 20 minutes. Mix with the cooked rice and spring onions. Serve immediately.
