This is another Catalan classic, popular in Andorra and the Catalan region of Spain. Ingredients:
2 bunches (about 500g) spinach, stemmed, shredded and blanched
Catalan Spinach Salad Preparation:Method:Gently fry the garlic with the oil in a pan until the garlic turns golden then add the raisins and pine nuts. Cook, stirring frequently, until the raisins plump up and the pine nuts begin to colour. Arrange the spinach in a warmed serving bowl and top with the raisin and pine nut mixture. |
