Cassava Salad Recipe

Origin: Liberia      Period: Traditional

Ingredients

1kg cooked cassava cut into 5cm chunks
1 x 400g tin mixed beans
6 eggs, hard-boiled and cut into 3 pieces
1 large onion, roughly chopped
1 jar mayonaise
1 tin of spam, diced
1/2 lettuce, shredded
4 celery sticks, chopped
3 large tomatoes, sliced
1/2 cucumber, sliced
paprika, salt and black pepper, to taste

Cassava Salad Preparation:


Method:

Mix the cassava with the beans onion and spam. Meanwhile, seson the mayonaise with the paprika, salt and pepper. Add this to the cassava and bean mix and incorporate. Spoon the salad int othe centre of a large serving plate and garnish with the eggs, lettuce, tomatoes, celery and cucumber. Dust more paprika over the top and serve chilled.
