Carob Chip Spice Biscuits Recipe

Origin: America      Period: Modern

Ingredients:

240g buckwheat flour
270g sweet brown rice flour (or 500g any whole grain flour)
180g carob powder
2 tsp star anise, ground
1 tbsp freshly-grated ginger root
2 tsp ground coffee beans
1 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp salt
360ml apple juice
150ml corn oil
2 tsp freshly-grated orange zest
2 tsp vanilla extract
1/2 tsp Angostura bitters
350g chopped Brazil nuts
300g carob chips
1 tsp allspice, ground

Carob Chip Spice Biscuits Preparation:


Method:

Mix the first 9 (dry) ingredients together in a bowl. In a separate bowl mix together the next 5 (wet) ingredients. combine the dry and wet ingredients together (but don't over-mix) then add the nuts, carob chips and allspice.

Drop the mixture by the desserts spoon onto oiled baking sheets and shape into biscuits. Place these in an oven pre-heated to 170°C and bake for 15 minutes, or until nicely browned and cooked through. Transfer to wire racks and allow to cool completely.
