Cape Cod Oatmeal Cookies
(Candied Fruit Christmas Cookies) Recipe

Origin: America      Period: Traditional

Ingredients:

1 egg
140g sugar
100g butter, melted
100g lard, melted
1 tbsp treacle (molasses)
60ml milk
230g rolled oats
140g seedless raisins, chopped
210g plain flour
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt

Cape Cod Oatmeal Cookies
(Candied Fruit Christmas Cookies) Preparation:


Method:

Cream together the egg and sugar until pale and creamy then add the melted butter and melted lard along with the treacle and milk. Whisk to combine then add the oats, flour, baking soda, cinnamon and salt. Stir to combine thoroughly before stirring-in the chopped raisins.

Drop the mixture by the heaped tablespoon 6cm apart on a well-buttered baking tray. Place in an oven pre-heated to 170°C and bake for about 10 minutes, or until just golden around the edges. Allow the cookies to cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely.
