Ingredients
250g rose hips (weighed after de-seeding and chopping)
Canina Honey Preparation:Method:Combine the rose hips with the water in a pan. Bring to a boil and cook, uncovered, for about 15 minutes. As the rose hips begin softening crush them against the side of the pan with the back of a spoon to release as much of the juice as possible. Pour into a colander lined with muslin and strain-off the juice into a bowl. Measure the volume of juice and make up to 250ml with water. Pour into a clean pan and add the lemon juice and sugar. Bring to a boil and cook rapidly until the mixture is thick enough to coat the back of a spoon. Pour into a clean and sterilized jar and store in the refrigerator. This makes an excellent alternative to maple syrup for use on pancakes and waffles. |
