Cameroonian Suya Recipe

Origin: Cameroonian      Period: Traditional

Ingredients:

450g meat (beef or lamb) cut into small pieces
1 tsp thyme
1 tsp curry powder
2 tsp minced red chilli
1/2 tsp black pepper
1/2 tsp coriander
1/2 tsp cayenne pepper
1/2 tsp dried basil
1/2 tsp salt
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1 yellow bell pepper, finely chopped
1 onion, finely sliced.

Cameroonian Suya Preparation:


Method:

Mix the spices and chillies with the meat and place in the fridge to marinate over night. The next day add the meat to a pan and fry until done then set aside. Add a little oil to the pan then place the peppers in this and fry until soft. Return the meat to the pan, mix with the peppers, and heat through.

Whilst the meat is cooking add some onions to another pan and fry in a little oil until beginning to crisp. Place the meat on a bed of rice and add the onions on top. Serve immediately.
