Ingredients
90g bacon, chopped
Calico Bean Stew Preparation:Method:Heat a little oil in a deep frying pan or skillet and add the bacon and minced beef. Cook on medium heat, stirring frequently, until evenly brown. Drain and set aside to cool. In a large (at least 4l) casserole dish mix together the cooked meat, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, mustard pwoder and celery. Cover the dish and place in an oven pre-heated to 170°C and cook for an hour. This dish is very versatile and can be served as a main course in itself. It can also be served over rice or as a topping for baked potatoes. You can also serve it as a side dish. |
