Calas Recipe

Origin: Cajun      Period: Traditional

Ingredients:

2 eggs
6 tbsp granulated sugar
2 tsp vanilla extract
1/2 tsp grated nutmeg
1/2 tsp grated lemon zest
1/2 tsp salt
2 tsp baking powder
450g cold cooked rice
240g plain flour
vegetable oil (for frying)
icing sugar

Calas Preparation:


Method:

Combine the eggs and granulated sugar and combine until pale yellow. Add the vanilla extract, nutmeg, lemon, salt, baking powder and rice and stir until well combined. Then add just enough flour to bind the ingredients together.

In a deep frying pan heat the oil to about 165°C and drop heaped teaspoons of batter into the oil (but not too many at a time). Fry until golden brown, turning once, for about 4 minutes. Remove from the oil, drain briefly then place on paper towels to dry. Keep warm, sprinkle with icing sugar and serve.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
