Cajun Stuffed Peppers Recipe

Origin: Cajun      Period: Traditional

Ingredients:

450g minced meat
500g stewed tomatoes
100g onions, chopped
100g green bell peppers, chopped
180g tomato paste
450g cooked rice
8 green bell peppers
sliced cheese

Cajun Stuffed Peppers Preparation:


Method:

Add the meat, tomatoes, onions, chopped pepper and tomato paste to a pan and cook for about 25 minutes, until the meat has cooked and the vegetables have softened.

Add the rice to the meat mixture then simmer for a further 20 minutes. Clean the peppers then add to boiling water and cook until they turn a darker green. Remove with a slotted spoon and place on kitchen towels until cold.

Stuff the peppers with the hot meat mix and serve topped with slices of cheese.
