Cajun Seafood and Noodles Recipe

Origin: Cajun      Period: Traditional

Ingredients:

180g uncooked, medium noodles
1 tbsp vegetable oil
150g chopped green bell pepper
1 medium onion, chopped
2 tbsp chopped fresh parsley
1/8 tsp cayenne pepper
1/8 tsp black pepper
2 garlic cloves, finely chopped
1 tbsp plain flour
1 400g tin whole tomatoes (undrained)
300g okra, topped, tailed and cut into rings
180g cooked prawns
180g cooked crab meat

Cajun Seafood and Noodles Preparation:


Method:

Cook the noodles as directed on the packet. Meanwhile heat the oil in a medium frying pan over medium heat. Add the pepper, onion, parsley, cayenne pepper, black pepper and garlic and fry for 3 minutes, stirring frequently.

Add the flour and stir in before adding the tomatoes. Break the tomatoes up then cook until the mixture thickens before adding the okra, prawns and crabmeat. Cook, uncovered, for 5 minutes, stirring occasionally. Serve over the noodles.
