Ingredients:
32 jumbo tiger prawns, peeled and de-veined
Cajun Sausage and Shrimp Skewers Preparation:Method:Mix together the olive oil, lime juice, salt and pepper. Place the prawns in this mix and marinate for 1 hour. Cut the sausages into quarters then alternate the shrimp and sausage pieces on four bamboo skewers. Meanwhile, quarter the onions and peppers, then cut the pepper quarters in half. Arrange the onions and peppers on four bamboo skewers. Cook all eight skewers on a grill for about 3 minutes a side, or until the prawns turn a pale white. Serve one meat skewer and one vegetable skewer on a bed of rice for each person. |
