Cajun Beans over Cornbread Recipe

Origin: Cajun      Period: Traditional

Ingredients

240g stewed tomatoes
1 tsp dried ground onion
Tabasco sauce
450g cooked mixed beans, drained
1 tbsp chicken stock
1/8 tsp garlic powder
buttermilk cornbread
90g grated Cheddar cheese

Cajun Beans over Cornbread Preparation:


Method:

Combine all the ingredients (except the cornbread and cheese) in a saucepan. Bring to the boil, reduce to a simmer and cook for 10 minutes.

To serve, split the cornbread in half, spoon the beans over the cornbread and sprinkle cheese on top.
