Ingredients:
280g sugar
Burnt Sugar Cookies Preparation:Method:Place the first 280g of sugar in a non-stick pan and heat until melted. Continue to cook until the sugar has become dark brown in colour then take off the heat. Immediately add 240m of boiling water to the caramelized sugar and stir to combine then set aside to cool. Meanwhile, add the buttermilk, lard, salt and ginger to a pan and heat until the lard melts. Take off the heat, pour into a clean bowl then allow to cool and whisk-in the eggs. Combine the buttermilk and sugar mixture with the remaining sugar and stir to form a stiff dough. Drop heaped teaspoons of the dough 6cm apart on a baking tray then place in an oven pre-heated to 180°C and bake for about 10 minutes, or until set and golden. Allow the cookies to cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely. |
