Bulgar Wheat, Red Pepper, Cucumber and Cheese Salad Recipe

Origin: Algeria      Period: Traditional

Ingredients:

225g bulgur wheat
300ml boiling water
4 tbsp olive oil
3 tbsp lemon juice
2 tbsp fresh mint, chopped
3 tbsp fresh coriander, chopped
1 red bell pepper, skin blistered, peeled and sliced into strips
1 bunch spring onions, chopped
2 garlic cloves, chopped
1/2 cucumber, coarsely chopped
115g Feta cheese, crumbled
salt and black pepper, to taste
lime wedges, to garnish

Bulgar Wheat, Red Pepper, Cucumber and Cheese Salad Preparation:


Method:

Place the bulgur wheat in a heat-proof bowl, add the boiling water and leave to soak for 30 minutes. Stir occasionally with a fork, until all the water has been absorbed.

Meanwhile, mix together the oil, lemon juice and seasonings in a bowl. Pour this over the bulgur wheat mixture and stir to combine. Add the herbs and mix well then add the remaining ingredients. Toss to combine then cover and chill until needed. Serve in a bowl, garnished with the lime wedges.
