Buckwheat Bread Recipe

Origin: America      Period: Traditional

Ingredients

120g flour
100g cornmeal
70g buckwheat flour
50g sugar
4 tbsp baking powder
3/4 tsp salt
2 eggs
250 ml milk
50 ml vegetable oil

Buckwheat Bread Preparation:


Method:

Grease a 20 cm square cake pan. Stir dry ingredients together in a large bowl, then add the milk, eggs, and oil. Blend until smooth, but do not over beat. Pour into a loaf tin and place in an oven pre-heated to 220°C, baking for between 20 and 25 minutes. Allow to cool then cut into squares.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
