British sherbet is not, unlike its American namesake, a frozen fruit-based dessert (you can find a whole range of these frozen sherbets here), rather it's a confection made from a combination of sugar and citric acid that melts and sparkles on the tongue. Ingredients:
2 tbsp icing sugar
British Sherbet Preparation:Method:The recipe is simplicity itself, just mix all the ingredients together and enjoy. How it works is a little more complicated.The fizzing sensation your feel on your tongue is created by the chemical reaction between the acid and the bicarbonate of soda. The acid dissolves on your tongue, creating liquid citric acid and this reacts with the bicarbonate of soda creating sodium citrate and carbon dioxide, and it's this gas that produces the effervescent effect. This is why you need completely dry ingredients to make this. Powdered sugar, crystalline or powdered citric acid and fine powdered bicarbonate of soda. As well as making the mixture sweet the icing sugar also helps keep it dry until needed. The recipe given above is a very basic one and you can play around with the ingredients a much as you want (for example, some commercial preparations mix citric acid and tartaric acid. However, by far the easiest way of changing the nature of the confection is to change the sugar. Try using demerara sugar or vanilla sugar. You can also add flavourings (but they must be dry and powdered), good examples would be cinnamon, coffee or even chilli powder. Simply let your imagination run riot! |
