Breakfast Pizza 2 Recipe

Origin: Britain      Period: Traditional

This is basically an English breakfast served on a pizza base and accompanied by eggs baked on the pizza itself. Everything you need to set you up for the day served as a pizza.

Ingredients:

1 bread dough pizza base
1 batch Tomato Sauce for Pizza
80g baked beans
60g grated mature Cheddar Cheese
50g button mushrooms, halved
4 slices of back bacon
6 cocktail sausages
1 fresh tomato, thinly sliced into wedges
salt and black pepper, to taste
oil for frying
3 eggs

Breakfast Pizza 2 Preparation:


Method:

Roll our or pull the dough on a floured surface until it forms a circle of about 25cm in diameter. Transfer to a large, well oiled, baking tray and using your thumb and forefinger form a lip all the way around the pizza. Cover with a clean tea towel and set aside in a warm place to rise for about 15 minutes.

Meanwhile, fry the sausages in a little oil until nicely browned then slice lengthways. Fry or grill the bacon, allow to cool, then cut into strips about 1cm in width. In the same pan fry the mushrooms then mix them into the tomato sauce along with the baked beans. Bring the mixture to a boil (do not stir too vigourously) then set aside to cool.

Cover the pizza base with the tomato and baked bean mix then arrange the sausages, bacon, sliced tomato and cheese on top (in that order). Place the pizza in an oven pre-heated to 190°C and bake for about 15 minutes.

Remove the pizza from the oven and crack 3 eggs on top. Return the pizza to the oven and bake for a further 2 or 3 minutes, or until the eggs have cooked. Serve immediately.
